I'm always a little hesitant to post recipes... A part of me argues that they aren't very 'Jesus-related', but then another part of me (A.K.A my mom and my sister) reassures me that they are indeed very relevant, because God Himself advises us to "eat to His glory" (1 Corinthians 10:31)! So, with the school days crunching my time to the core (no pun intended), I have decided to post new healthy recipes more regularly to - hopefully - help busy people find the time in their day to eat more satisfying, good-for-you foods! :)
Without further ado, here's the recipe:
Just kidding, one last thing: my mom used to make this constantly when I was young (but without the greens, that's my addition, hehe), and it was her go-to potluck dish, so I'm sharing a family recipe... This is exciting!~
Superfood Carrot & Raisin Salad
Serves 2-4
Ingredients:
- 4-5 medium-sized carrots, peeled
- 1/2 cup chopped carrot top leaves* (to taste, optional)
- 1/2 cup sliced grapes
- 1/3 cup raisins
- 1/3 cup sunflower seeds
- 1/2 cup diced apples, optional
- 1/2 cup (extra virgin) olive oil
- 1/4 cup raw apple cider vinegar
- 1 tablespoon raw honey
- 1 large garlic clove, minced
- 1 teaspoon dijon mustard
- Salt & pepper to taste
Directions:
- Mix the dressing ingredients.
- Grate the carrots (with a food processor or by hand), slice the grapes in half, and dice the (optional) apples.
- In a large bowl mix all of the remaining ingredients, including the carrots and the fruits. Add the dressing to taste.
- Serve and top your bowl with the vibrant carrot top leaves. Bon appétit!
*You can find carrots with the top leaves still intact at your grocery store, or in your garden like I did. And no, they are not poisonous, they are actually filled with good vitamins! ;)
Phew, just think of all the nutrients you are getting in one simple bowl of salad! From the vitamins in the raw carrots, to the enzymes in the honey, and the copper minerals in the sunflower seeds- ah, I need to stop! :D Quite the picker-upper for those cold autumn days, don't you think?
